Got a few bottles of Champagne leftover from New Year's? Add it to your cooking for sublime results! Here are some ideas to get started.

Champagne pheasant

Season your pheasant with salt and pepper, then brown in a buttered casserole dish. Add chopped onions and carrots, then add 4 tablespoons calvados and light on fire to flambé the dish. Add the Champagne and cook for 45 minutes, covered. Add some cream, mix well with the Champagne and serve immediately.
