Baked ham always makes me think of Easter while I was growing up. My mom would always bake a ham and I looked forward to it much more than turkey on Christmas. My memory of baked ham would always be what seemed like a ginormous piece of meat covered in pineapple rings secured with toothpicks. Today many baked ham recipes still feature pineapple, but also different combinations of honey mustard or brown sugar glazes also compliment the flavor of ham. Sweet and savory seem to work perfectly for baked ham. However you choose to prepare your baked ham and don’t forget to save your ham bone for beans or split pea soup!

Caramelized Pork

Ingredients

  • 1 tbsp neutral oil
  • 250g / 2 cups pork fillets, cubed
  • 1 /4 cup caramel
  • 100ml / 1/2 cup water
  • 1 tbsp Vietnamese fish sauce (Nuoc Cham)
  • 1 tbsp soy sauce
  • 1 tbsp grated ginger
  • Crushed peanuts

Method

  1. Brown the pork fillet in a skillet with the oil
  2. Add the caramel, water,  fish sauce, soy sauce and fresh ginger.
  3. Simmer for 10 minutes (until the liquid has reduced)
  4. Serve over white rice with crushed peanuts. 
  5. Enjoy!
