Cream cheese icing is a classic choice for frosting. A little more experimental than traditional buttercream icing, cream cheese makes for a luscious, creamy topping to cakes, cupcakes and cookies. If you don’t like the white color of cream cheese, you can add food dye to brighten it up. Always make sure your cream cheese is room temperature when making the icing, and make sure not to over-whip it, otherwise it becomes runny.

Ingredients

  • 2 cups strawberries
  • 12 oz  (1 1/2 cups) mascarpone cheese
  • 1/2 cup sour cream
  • 1/2 cup icing sugar

Method

  1. Blend the strawberries to a pulp.
  2. Mix the mascarpone cheese, sour cream, and sugar.
  3. Crush the ginger biscuits.
  4. In a jar or bowl, layer the biscuits, the strawberries, and the cream mix (biscuits, part of cream mix, strawberries, and then another layer of cream mix).
  5. Top off with a fresh sliced strawberry and some ginger biscuit crumbs.
