Hello Mary Ellen, so tell us...


When did you begin your blog, and what inspired you to start it?


I started my blog in the summer of 2011. I would have to say several things inspired me to start this blog. First of all, my daughter thought it would be a really good idea and encouraged me with her willingness to help me get started. I also have a degree in Home Economics and naturally love to bake. Last and possibly most importantly I have many food allergies/sensitivities, and have learned to work around them in the kitchen. Many family and friends have asked for my help with their own allergies/sensitivities, in shopping and cooking. Overtime people just encouraged me.

Are you involved in the blogging community - how do you attract new readers?


I certainly try to be involved in the blogging community. I say that with a chuckle because I have a lot to learn. I am currently using Facebook, Twitter, and Pinterest. I probably will start Instagram soon as well. I also enjoy reading other blogs.

Who are your culinary influences?


Julia Childs was definitely an influence. When I was just a little girl I watched her on T.V. as much as possible. I loved watching her cook and listening to her talk. My mom isn't a fan of cooking, but she taught me how to read a recipe when I made my first batch of cookies. As I got older I was fascinated by Martha Stewart. As T.V. choices broadened, Food Channel was always on while I was in the kitchen.

How has living on a farm in Oregon influenced your cooking?


It certainly keeps me busy! We live somewhat small town in Oregon, so I have to plan ahead and have ingredients on hand, especially relating to my food allergies. I have learned a lot about preserving fresh fruits and vegetables. We have wonderful fruit trees and a big garden. I have been known to spend weeks preserving produce my husband has grown. The frozen tomatoes for example will last all year long.

What is your earliest food memory?


Tuna Fish Casserole...yikes! I am pretty sure my mom made it every week. Baked spaghetti is a close second. I remember thinking it was odd to put the noodles on a plate and sauce over the top.

Do you have a secret ingredient, a product you use a lot that is unexpected?


Right off I want to say chocolate...but that's clearly not a secret! I do use oats in a lot of recipes. I like the chewiness it adds to baked goods and it's hearty and healthy. But, I also use a lot of applesauce. I will throw it in just about any time I run short of something else, and it never disappoints me.

If you could be a contestant or guest on any cooking show what show would you choose?


That is such a hard question for me, I love variety. When I think about this I imagine myself cooking along side the person, so I am thinking personality not just cooking style. Kelsey's Essentials, Extra Virgin, and Nadia G's Bitchin' Kitchen are my favorites.

When you have a last minute get together, what are your go to dishes?


Chicken Enchiladas with spanish rice, black beans and corn on the cob when in season. Chips guacamole, and salsa on the side. I usually have precooked, shredded chicken in the freezer, so it's a really easy one to prepare last minute. Another quick go to dish for me is spaghetti with sautéed veggis to add on top. Two choices of sauce, meat and vegan. French bread and salad.

What are your goals for your blog? Where would you like to see it in the next year? Five years?


My goal for my blog is to share what I have learned. I like the idea of being a resource for people to go to if they discover they have food allergies/sensitivities or to just a place to find a new recipe. Someday...maybe in five years or sooner I am hoping to write a cookbook or market some of my ideas.

Anything else you would like to share?


I really enjoy the opportunity to share my interest of in foods on the internet. It has become one of my favorite hobbies.
