"I think the secret weapon in any kitchen is to simply enjoy cooking. Cooking with pleasure and ease can transform any dish."

Hello Caroline, so tell us...

When did you begin your blog, and what inspired you to start it?

I started blogging around November 2010 as a way to have a creative outlet, I used to work full time and suddenly, I was a stay at home mom. My blog didn't have shape and sense of direction when I first started, it took a while for me to find a flow that I liked. Once, I started sharing food, it started going in another and better direction because suddenly I was sharing something that I love to do, I love cooking!

What is your earliest food memory?

I can't remember how young I was but I would love when my mom would chop tomatoes, add salt and a touch of vinegar and I always eat it up with such joy, something so simple yet so delicious!

Are you involved in the blogging community - how do you attract new readers?

I wish I was more involved in the blogging community but I do try to visit other blogs as often as I can, join and share recipes in link parties and also by posting in my Facebook page. I found that my blog attracts more and new readers by link parties and also by Pinterest.

Do you have a secret weapon in the kitchen?

I think the secret weapon in any kitchen is to simply enjoy cooking. Cooking with pleasure and ease can transform any dish. It's funny but my husband can always tell when I make a dish in a stressful day, he says that I put too much salt on everything when I'm stressed and it's true! So, just relax and enjoy the process.

What is/are your go to recipe(s) if you’re preparing a last minute dinner or party?

If I'm preparing a last minute dinner, I make either baked chicken breast or tilapia and serve with a quick sauce like lemon-butter or mustard and thyme with a nice salad or vegetables. Another easy choice could be a delicious pasta dish.

If you could be a contestant or guest on any cooking show what show would you choose?

Even though I enjoy watching TopChef and MasterChef, I don't think I could be a contestant or guest on either show. I'm in awe of how people can come up with amazing and creative dishes under so little time and so much stress. I would faint in such stressful environment like that but I do love to watch.

Are there any chefs that you admire in particular?

I admire Julia Child a lot! I love the way she loved food, she enjoyed cooking while not taking herself too seriously but really found joy in the whole process of cooking. There's one quote of hers that I love: "People who love to eat are always the best people."

Is there any dish, ingredient or type of food you refuse to cook or eat?

Yes! I refuse to cook or eat any weird organ part from any animal. I think that pretty much sums it up!

What are your goals for this blog? Where would you like to see it in the next year? Five years?

I want to continue blogging and sharing delicious recipes and maybe in the future publish a cookbook. I would love to see my blog grow in readership and subscribers in the future too.

Anything else you would like to share?

My only advice is to never compare yourself or your blog to anyone! If you want to start blogging or you're already blogging, just be yourself, do your best and have fun!

Thank you Caroline for answering our questions and see you soon!
