  • 3 C flour
  • 3 C milk
  • 3 eggs
  • 1 1/2 t salt
  • 1 T baking powder

Preparation

Step 1

Beat the eggs and milk together, then add dry ingredients and mix thoroughly.

Step 2

Put griddle (preferably cast-iron) on stove-top. Turn burners on to medium-high.

Step 3

Allow the griddle some time to heat up, then take a stick of frozen butter and grease the griddle. You'll know it's hot enough when the butter begins to sizzle (if it smokes, it's TOO hot!)

Step 4

Using a large cooking spoon, ladle pancake batter onto the griddle to fill it up.

Step 5

When a pancake begins to bubble consistently, use a spatula to flip it over.

Step 6

After it has cooked on the opposite side ALMOST as much as on the first side, flip it over to check. If both sides are browned appropriately, put on a plate/platter.

Step 7

Continue to cook all of the batter this way until it has been used up, making sure to re-grease the griddle between each batch of pancakes.

For best flavor, do not use anything except REAL butter, which actually, despite the myth, is healthier than most margarines. If you want a healthier version, you can use olive oil instead of butter, but really, pancakes aren't pancakes without that buttery flavor.
*If you stack the pancakes layered over each other, covering the whole plate, they will keep each other hot while you cook
