Diced Potatoes "jazzed up". It started with me watching my mother cook potatoes and yellow onions in a cast iron skillet. I just added my favorite ingredients over the years.

Ingredients

  • Red or White Potatoes (your choice)
  • Yellow Onion
  • Red Onion
  • Green Onion
  • Chives
  • Green Pepper
  • Black Pepper
  • Lawry's Seasoning Salt
  • Original Blend Mrs. Dash
  • Garlic Salt
  • Oregano
  • Italian Seasoning
  • Parsley Flakes
  • Salt
  • Cooked Bacon
  • Shredded Cheddar Cheese
  • Vegetable Oil

Preparation

Step 1

Fry 6 slices of bacon and crumble after cooling off
Peel 4-5 medium to large potatoes then dice into small cubes
Chop Onions and Pepper

Step 2

Add 1/3 cup of vegetable oil to frying pan on medium heat
Add potatoes and a pinch of salt
Add black pepper and mix potatoes around until browning
Add remaining ingredients and mix
Place lid over potatoes to soften inside
Stir occasionally

Step 3

Remove from heat and add cheese to melt

Step 4

Top off with bacon bits

Step 5

Enjoy!

To save time you can use a food processor versus chopping by hand
You can substitute processed bacon bits versus frying bacon to crumble

  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
