- 2 lbs ground meat
- 1/2 cup chopped onion
- 2 cans corn
- 2 cans rotel tomatoes
- 3 cans beef broth
- 2 cans pinto beans
- 1 can cream corn
- 1 can of cream of mushroom
- 2 large cans of tamales, cut into bit size pieces
- 2 tablespoon Cajun seasoning
- 1 teaspoon chili powdwer

- 1 can (14 oz) cream style corn
- 2 eggs, lightly beaten

- 1 package shredded taco cheese
- 1 can (10 oz) hot enchilada sauce
- 3 cups shredded cooked chicken
- 1 cup sour cream (optional)
