1. Using The Right Pasta
For great mac n' cheese, never underestimate the importance of great macaroni - it is the first half of the name after all. We suggest a quality brand, Italian if you can get it, of macaroni style pasta. We're not fanatical traditionalists that are entirely against using any other pasta like fusili or penne, but we will say this, for great Mac n' Cheese you need a pasta with gaps, holes, spaces for the super cheesy sauce to settle into.
