Marinades

Did you know that beer serves as an excellent meat tenderizer? Malt enzymes work to break down the collagen contained in meats, while infusing them with flavor at the same time. This makes beer an excellent option for marinade recipes. Be selective about the type of beer you choose, however, as light beers impart little to no flavor while heavy stouts (like Guinness) can be overpowering.

Choose a beer that falls somewhere in the middle—amber, copper, or red in color, with a moderate flavor. Add spices, herbs, sauces (Worcestershire sauce, soy sauce, Tabasco) and other aromatics (minced garlic, grated ginger). Season the meat with salt and pepper, then place in a bag with the beer marinade and let sit for at least 1 hour before cooking.
