Mixed Vegetable Casserole

Ingredients

  • 1 package (16 oz) frozen mixed vegetables, thawed
  • 1 large onion, chopped
  • 3 celery stalks, chopped
  • 1 cup (4oz) shredded cheddar cheese
  • 1 cup mayonnaise (regular, light will not work)
  • ¾ cup crushed butter flavored crackers
  • ¼ cup butter, melted

Preparation

Step 1

In a bowl, combine the first five ingredients.

Step 2

Spoon into a greased 1 ½ qt. baking dish.

Step 3

Toss the cracker crumbs and butter, sprinkle over the top.

Step 4

Bake uncovered at 350° for 30-35 minutes or until heated through.
