Zesty Lemon Bars

Bake the ultimate in tangy bar cookies by baking these which have a lemony filling over a nice pressed in crust. If you like lemony treats, you'll really enjoy these. And, so easy and quick to make! The trick for a really zesty lemon tang, is, of course, REAL lemons.

Ingredients
- CRUST:
- 1/3 c.softened butter or margarine
- 1/4 c. granulated sugar
- 1 cup sifted flour
- FILLING:
- 2 beaten eggs
- 3/4 c. sugar
- 2 T. flour
- 1/4 t. baking powder
- 2 t. finely shredded lemon peel (lemon zest)
- 1/8 c. lemon juice from the lemon

Preparation
Step 1
In a medium mixing bowl, beat softened butter (or margarine) with an electric mixer on medium to high speed for 3 seconds. Add the 1/4 cup of sugar, beating until combined. Beat in the 1 cup of flour until it turns crumbly. Press this mixture with your hand firmly into the bottom of an ungreased 8 X 8 baking dish. Leave a 1/2 inch or more ridge up the sides of the dish so the filling stays inside the crust. Bake at 350 degrees for 15 to 18 minutes or until it just turns golden. It hwill be baking again, so don't over cook or crust will be tough.
Step 2
Begin preparing the filling by combining the beaten eggs, 3/4 cup of sugar, the 2 tablespoons of flour, the 2 teaspoons lemon zest, the lemon juice and baking powder. Pour filling slowly over baked crust. Bake 20 minutes or until edges are lightly browned and the center of filling is set. Cool, then sift powder sugar over the top. Cut into 18 bars.
