Both cooked bacon and cold bacon fat give these scones a smokey bacon flavor and meltingly tender crunch

  • Scones:
  • 3 ounces bacon, cut into small cubes
  • 2 medium-sized baking apples (such as pink pearl, pink lady, or granny smith), peeled, cut off the core, and cubed
  • 1 1/2 cups (7 1/2 ounces) all purpose flour
  • 1/2 cup (2 1/4 ounces) whole spelt (or whole wheat pastry) flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly grated nutmeg
  • 2 tablespoons reserved, chilled bacon fat (see directions)
  • about 3 tablespoons cold, unsalted butter
  • 1/4 cup maple syrup (preferably grade B)
  • 1/4 cup whole milk
