Ingredients

  • 1 lb hot Italian sausage
  • 1 lb penne
  • 1 tsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) tomatoes, undrained, coarsely chopped
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 cup fresh parsley, chopped
  • pepper to taste
  • 2 tbsp freshly grated parmasan cheese

Preparation

Step 1

In skillet, cook sausage over medium heat until no longer pink in centre.
Drain well, cut into thin round slices.
In a large pot of boiling water, cook penne until tender but firm, drain & return to pot.
In a non-stick pan, heat oil over medium heat, cook onion until tender.
Add garlic, tomatoes, basil and oregano, simmer uncovered for 10 mins.
Add cooked sausage. Pour over pasta, toss to mix.
Sprinkle with parsley, pepper to taste and parmasan.
