Ingredients

  • Chicken Filling:
  • 3 chicken breasts cooked in oven (reserve ½ cup pan juices for filling)
  • 2 tbsp oil
  • 1/4 cup minced onion
  • 1/4 cup each finely chopped celery and carrot
  • 2 tbsp minced parsley
  • 3/4 tsp salt
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/8 tsp nutmeg
  • 1/2 tsp white pepper
  • 1 cup ricotta or creamed cottage cheese
  • 1/2 cup fresh ground Parmesan cheese
  • 1/2 cup chicken broth
  • Cheddar Sauce:
  • 4 tbsp melted butter
  • 5 tbsp flour
  • 1 10 oz. can chicken broth (use rest of can from filling + water)
  • Salt and pepper to taste
  • 1 cup grated low fat cheddar cheese
  • 1 cup Mindless Meat Sauce
  • 1/2 cup milk
  • 1 package Knorr’s Swiss Hollandaise or your own recipe
  • 3 6oz packages low fat Monterey Jack cheese
  • 20 cannelloni shells

Preparation

Step 1

Chicken Filling:

Cook chicken and finely chop or grind meat. Combine oil, onion, celery, carrots and parsley in saucepan and cook for 10 minutes. Combine parmesan cheese and ricotta or cottage cheese in a large bowl until smooth. Add salt, oregano, basil, nutmeg and pepper. Add chicken, pan juice, chicken broth. Beat until well mixed. This may be covered and refrigerated or frozen until ready to use.

Step 2

Cheddar Sauce:

Melt butter in sauce pan, add flour until smooth, then carefully add chicken broth, stirring constantly. Add salt and pepper to taste. Stir in cheddar cheese until well blended and thick. Now add prepared meat sauce and cream.

Step 3

Hollandaise:

Prepare your own or cook according to package instructions.

Step 4

Cook canneloni shells in boiling, salted water for 8 minutes. Drain and rinse in cold water. Don't be concerned if shells split.

Step 5

Spoon thin layer of sauce in two 9x13 inch pans. Using approximately 2 tbsp chicken fillling per shell, shape filling in hands and insert in shell or roll up in shell or crepe. Place in pans side by side, with 5 in each row. Carefully spoon sauce around canneloni.

Step 6

Cover each canneloni completely with strips of monterey jack cheese. Bake in preheated 425C oven for 10 minutes, until cheese is bubbling. Serve immediately.
