Great appetizer served with Ranch dressing or Blue Cheese right out of the bottle. Serve with toothpicks in each puff.

Ingredients

  • 1-10 oz. box frozen chopped spinach
  • 1/2 c. chopped onion
  • 2 slightly beaten eggs
  • 1/2 c. grated parmesan cheese
  • 1/3 c. blue cheese salad dressing
  • 2 TBS melted margarine
  • 1/8 tsp. garlic powder
  • 1-8 1/2 oz. pkg Jiffy corn muffin mix

Preparation

Step 1

Cook spinach and onion. Drain very well and press out excess liquid. In bowl mix eggs, cheeses, salad dressing, margarine and garlic powder and stir into spinach and muffin mix. Chill 1 hour until easy to handle.

Step 2

Shape into 1" balls and arrange on baking sheet. Cover and chill till serving time or place in a freezer container, label and freeze for up to 2 months. Place puffs on baking sheet and bake at 350 for 12 minutes or till golden. (For frozen puffs bake 15 min.)

I often put the puffs on a parchment paper lined baking sheet so they don't stick.
