  • For Alamber:
  • green peppers
  • beef
  • potato
  • onions
  • green chiles (optional)
  • grated cheese (you can buy the packaged grated Mexican cheese)
  • salt and pepper.
  • For the tortillas: corn flour
  • For the salsa roja: tomatoes red chiles garlic salt

Preparation

Step 1

Prepare tortillas: Combine the corn flour with a little water and mix until a soft dough. Divide dough into small balls and flatten them as thin patties. Reserve covered with a layer of plastic wrap.

Step 2

Preparation of salsa roja: Place tomatoes on a broiler pan, dry. Meanwhile, roast the red chiles to enhance their flavor. Crush with a pestle peppers with garlic and salt. When the tomatoes are roasted, the skin is black and stands alone. Remove skin and mash with hot peppers.

Step 3

Preparation of Alambre: Cook the potatoes and cut into cubes. Fry the chopped onions, diced peppers and cut meat into small pieces in a skillet. Then add the diced potatoes and peppers. Pour into the pan and cover with grated cheese to melt cheese.

Step 4

Preparation of tacos Alambre: Broil cheese for a couple minutes. In a dry pan cook the tortillas. Fry the tortilla on one side and then, when it is golden, flip to cook the other side. Take a tortilla, place in the center a little Alambre mixture, add the salsa roja to taste. Roll the tortilla and enjoy.

  • 4 Big tortillas
  • 4 Handfuls of baby spinach

METHOD

  1. Slice the cherry tomatoes and black olives in half.
  2. Lay out a quesadilla, and top with baby spinach, cherry tomatoes, olives, feta and cheddar.
  3. Fold in half.
  4. Heat a pan and drizzle with olive oil. 
  5. Cook quesadilla on both sides, until golden.
