Stuffed Pork Roast

Ingredients

  • 2.2 lbs of pork roast in the net
  • 10 slices of bacon
  • 10 slices of Swiss cheese
  • 10 medium potatoes
  • 1 onion
  • 3 tomatoes
  • 3 cloves of garlic
  • parsley
  • thyme
  • Herbes de Provence
  • Salt and pepper
  • mustard

Preparation

Step 1

Cut slices 1.5cm into the edge of the roast (the slices should not go all the way through).

Between each cut, insert a slice of bacon and 1 slice of cheese. Secure back together with kitchen twine.

Step 2

Peel the potatoes, cut in half.
Peel onion, cut into quarters.
Wash tomatoes, cut in half.
Finely chop the garlic and parsley together.

Step 3

Cooking: Rub the roast with mustard and place in a baking dish. Arrange around the onions and potatoes. Salt lightly (because the bacon is already salty) and pepper. Sprinkle with herbs de Provence. Put the dish in an oven preheated to 400 F.

After 15 min, add 1/2 glass of water. Cook 45 minutes. Add the tomatoes (which will be mixed with garlic, parsley), on the potatoes and cook for another 15 min.
