Chicken Cabbage Salad

Ingredients

  • 1 3oz package ramen noodles
  • 1/4 cup slivered almonds
  • 2 tablespoons sesame oil
  • 3 cups shredded napa or green cabbage
  • 2 cups chopped cooked chicken
  • 1/4 cup thinly sliced green onion
  • 1/4 cup red pepper
  • 3 tbsp salad oil
  • 2 tbsp white wine or rice vinegar
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp toasted sesame oil

Preparation

Step 1

Discard the seasoning packet from the noodles. Break up the noodles and space in a baking pan along with the almonds and sesame seed oil

Step 2

Bake in a 350 degree oven for 5 minutes or until a nice golden brown, remove from oven

Step 3

In a large salad bowl combine cabbage, cooked chicken, green onions, and red pepper toss to mix

Step 4

For dressing, in a screw-top jar combine oil, vinegar, soy sauce, sugar, and sesame oil. Cover and shake for 1 minute

Step 5

Pour over cabbage mixture, add toasted noodle mixture, toss to coat
