Ingredients
- 1 ½ cup of white flour
- 1 cup of white sugar
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- ½ teaspoon of salt
- ½ teaspoon of baking soda
- ¾ cup of oil
- 2 eggs
- 1 teaspoon of vanilla extract
- 1 cup of shred carrot
- 1 cup of shred zucchini
- ½ cup of coconut
- ½ cup of raisin…..or replace by chocolate chip

Mix together and pour into muffin tins. Bake at 350F for 45 to 60 minutes
