Ingredients
- 1/3 Cup butter, softened
- 1/2 cup sugar
- 2 eggs beaten
- 3/4 cup evaporated milk
- 2 cups mashed sweet potatoes
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 9 inch unbaked pastry shell
Preparation
Step 1
Bring a large pot of water to a boil over medium heat.
Peel the sweet potatoes, and cut them up. When the water boils, add the cut sweet potatoes to the water and lower heat to a simmer. Simmer for 15 minutes or until the sweet potatoes can easily be pierced with a knife. mash the sweet potatoes Cream butter and sugar in a bowl. Add eggs mix well. Add Sweet potatoes, vanilla, cinnamon, nutmeg, milk and salt, mix well. Pour into pie shell. Bake ate 425 for 15 minutes. Reduce heat to 350 for 35-40 minutes longer until a knife comes out clean.
