Stuffed Shells

This is one of our family's favorite recipes, we love them! They do take some work but are delicious! You can use shells or manicotti noodles, I even use a varation of this for lasagna

Ingredients

  • I batch tomato sauce
  • 1 Egg
  • 12 shells or 8 manicotti shells
  • 1/4 cup cooked chopped spinach
  • 1 container Ricotta
  • 1/2 cup Mozzarella
  • 1/2 cup parmesan
  • 2 T. Parsley
  • 1/2 t. Oregano
  • 1/8 t. Nutmeg

Preparation

Step 1

Cook pasta shells about 12 minutes or until tender but still firm; drain. Cool shells in a single layer on a piece of greased foil. For filling Stir egg, ricotta cheese, mozzarella cheese, Parmesan cheese, the tablespoons parsley, and oregano. Spoon a scant 1/4 cup filling into each cooked shell. Arrange filled shells in a 2-quart square baking dish. Combine undrained tomatoes and tomato sauce; pour over shells in baking dish. Bake, covered, in a 350 degree F oven for 15 minutes. Uncover and bake 10 to 15 minutes more or until heated through.To serve, sprinkle with additional parsley and Parmesan, if desired. Makes 4 servings.
