Ingredients

  • These two ingredient muffins couldn’t be simpler to make. You’ll need 1 pint of your favorite Vanilla ice cream and 1 1/2 cups of self-rising flour.

Preparation

Step 1

Blend together flour and ice cream with a mixer until well combined. The batter will be a bit lumpy. Butter 6 muffin cups or spray with Baker’s Joy. Scoop batter into muffin cups. They should be about 3/4 full. Optionally, sprinkle tops of muffins with a 50/50 blend of sugar and cinnamon. Bake at 350 degrees for about 20 minutes.
