Martha Stewart’s Luscious Lemon Bars

These bars are delicious , they have great flavor and are so yummy!

Ingredients

  • Crust:
  • 3/4 cup (1.5 sticks) of butter, frozen.
  • 1 3/4 cups all purpose flour
  • 3/4 confectioners (powdered) sugar
  • Filling:
  • 4 large eggs
  • 1 1/3 cups granulated sugar
  • 3 tablespoons all purpose flour
  • 1/4 teaspoon coarse salt
  • 3/4 cup lemon juice
  • 1/4 cup whole milk (I used 2% lactose free milk, since that's all I had.)
  • Confectioners (powdered) sugar for dusting.

Preparation

Step 1

Preheat oven to 350 degrees. Grease a 13x9 pan and line with parchment. I cut my parchment longer than the pan so that it created an overhang, making it easier for me to get the squares out of the pan later on. Grate the butter on a grater with larger holes. Whisk together dry ingredients.
Add grated butter and stir into the dry mixture until it looks crumbly and combined. Transfer mixture to your dish. Press down to flatten and fit into the corners. Freeze crust for 15 minutes, and then into oven until slightly golden, 16-18 minutes. Leave the oven on. While the crust is baking, make the filling. When the crust is done, remove from oven and reduce the temperature to 325 degrees.Pour the filling over the crust. You do not need to cool the crust!

Step 2

Bake until filling is set and edges are slightly golden brown, about 18 minutes.Remove from oven and leave it in the pan. Allow it to cool on a wire rack slightly, and then remove from the pan to cool on the rack completely. Once the squares have cooled, ( I was impatient and I put them in the freezer to speed up the process, I also let them cool in the pan for about 5 minutes then pulled them out and set them on a rack to cool,) dust with powdered sugar, cut into squares, and enjoy.
