Ingredients
- 1 1/4 cups flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 3/4 cup sugar
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 3/4 cup low fat milk
- 1 Tbsp vinegar
- FILLING and TOPPING
- 2 cups sliced strawberries, divided
- 1 1/2 cups nonfat sour cream
- 1 Tbsp honey
Preparation
Step 1
Preheat oven to 350F. Spray a 9-inch round baking pan with cooking spray.
Step 2
On a sheet of waxed paper, combine flour, cocoa, and baking soda. mix well. In a medium bowl, using a mixer on medium speed, beat together sugar applesauce, and oil. Add milk and vinegar. At low speed, beat in flour mixture until blended. Pour batter into pan, smooth top.
Step 3
Bake until a toothpick inserted into center comes out clean, about 30 minutes. Place pan on a wire rack and cool for 10 minutes. Turn cake out onto rack and cool completely.
Step 4
Meanwhile, prepare filling. In a small bowl, mash 1 cup of strawberries. Stir in sour cream and honey. Slice cake in half horizontally. Place 1 cake half on a serving plate. Spread with some filling. Top with remaining cake layer. Spread remaining filling on top. Arrange remaining strawberries on top.
