Chocolate Frosting

Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 1/2 cup low fat milk
  • 1/4 cup firmly packed dark brown sugar
  • 1/2 cup low fat buttermilk
  • 1 tsp vanilla extract

Preparation

Step 1

In a medium sauce pan over medium heat, combine cocoa, sugar, milk, and brown sugar. Cook, stirring constantly, until cocoa and sugar are dissolved.

Step 2

Add buttermilk to pan, cook stirring constantly, until slightly thickened, about 5 minutes.

Step 3

Remove from heat. Pour chocolate mixture into a medium bowl. Stir in vanilla and cover bowl with plastic wrap. Refrigerate frosting until chilled, about 1 hour

Don't limit this to frosting cake. Use it as a dip for fresh fruit. Heat frosting over low heat until warm. Place in a serving dish and serve with assorted fruit such as sliced pears, strawberries, or banana chunks.

This frosting also makes a great cookie filling. For extra flavor, add 1/8 tsp of almond or mint extract to frosting. Stir well. Spread about 1 1/2 tsp frosting on the flat side of a reduced fat sugar cookie or graham cracker square. Top with a second cookie and serve.
