Ingredients
- 2 cups fresh whole-wheat bread crumbs
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 2/12 pound chicken, skinned and cut into 8 pieces
- 1/4 tsp freshly ground black pepper
- 1 cup plain nonfat yogurt
Preparation
Step 1
Line a baking sheet with foil and spray with cooking spray. Set aside.
Step 2
In a shallow bowl or pie plate combine the bread crumbs, paprika and cayenne pepper. mix well and set aside.
Step 3
Season the chicken pieces with black pepper. Using a rubber spatula, spread a thin layer of yogurt over chicken. Gently roll the coated chicken in bread crumb mixture and pat to coat thoroughly.
Step 4
Place the chicken in the prepared baking sheet; place in the refrigerator for 15 minutes to help the coating adhere. Place oven rack in the upper third of the oven. Preheat oven to 400F.
Step 5
Bake chicken until golden and juices run clear when meat is pierced with a knife, about 1 hour, do not turn. Place the chicken on serving plates. Serve immediately.
For crunchier chicken coating, substitute 2 cups of crushed cornflakes for the bread crumbs. Or for an herbal flavor, add 1/4 tsp of dried basil and 1/4 tsp of dried oregano to bread crumbs. Proceed as the recipe directs
