Ingredients
- 1/3 cup bread crumbs
- 1/2 tsp freshly ground black pepper
- 1/4 salt
- 1 egg white, lightly beaten
- 1 pound cod or haddock fillets, cut into 1 1/2 inch wide strips
- 1 Tbsp olive oil
- For the Chips
- 2 medium russet potatoes
- 1 Tbsp olive oil
- 1/4 tsp salt
Preparation
Step 1
Preheat ovento 450F. Spray a shallow baking pan with cooking spray.
Step 2
To prepare chips, cut potatoes lengthwise into 1 inch strpis. P lace in a large bowl and toss with oil and salt. Arrange chips on prepared pan and bake, turning once, until golden brown, about 30 minutes.
Step 3
While the chips are baking, on a sheet of waxed paper, combine bread crumbs, pepper and salt. Mix well.
Step 4
Place egg white in a shallow dish. Dip fish into egg white, allowing excess to drip back into dish. Dredge fish in bread crumbs, patting to coat fish thoroughly on all sides.
Step 5
In a large skillet, heat oil over medium high heat. Add some fish to the skillet. Cook until golden brown and fish flakes easily when tested with a fork, about 5 minutes. Drain on paper towels; cover with foil to keep warm. Repeat with remaining fish. Serve immediately with chips.
