Grilled New Potatoes

Ingredients

  • 1 pound new potatoes, scrubbed
  • 2 tsp olive oil
  • 1 tsp grated lemon peel
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/8 crushed re hot pepper flakes
  • 1/8 tsp freshly ground black pepper

Preparation

Step 1

Heat a charcoal grill or preheat a gas grill. Slice each potato into wedges.

Step 2

In a medium bowl, combine oil, lemon peel, rosemary, salt, red pepper flakes, and black pepper. Mix well. Add potatoes and toss to coat.

Step 3

Place potatoes crosswise on grill rack. Grill potatoes 4 inches from heat, turning occasionally, until golden brown, about 25 to 30 minutes. Serve immediately.

Variation: To make grilled potato salad, grill potatoes as directed and then cool completely. Meanwhile prepare a vinaigrette. In a large bowl, combine 1/2 cup chicken broth, 1/4 cup balsamic vinegar, 2 Tbsp ketchup, 2 Tbsp prepared mustard, 1/2 tsp dried thyme, and 1/4 tsp cayenne pepper. Mix well. Add potatoes, toss to combine. Cover with plastic wrap and refrigerate for at least one hour, tossing occasionally to blend flavors.
