Ingredients
- 1 cup yellow cornmeal
- 1 cup flour
- 4 tsp baking powder
- 1 Tbsp sugar
- 1 tsp onion salt
- 3/4 cup grated cheddar cheese
- 1/2 cup plain yogurt
- 1 large egg
- 1 cup frozen corn or 1 can (8 oz) whole kernel corn, drained
Preparation
Step 1
Preheat oven to 400F. Spray a 9 inch square baking pan with cooking spray.
Step 2
In a large bowl, combine cornmeal, flour, baking powder, sugar, and onion salt. Mix well. Stir in cheddar.
Step 3
In a small bowl, whisk together milk, yogurt, and egg. Make a well in center of dry ingredients. Add milk mixture and corn to cornmeal mixture. Stir until dry ingredients are just moistened. (batter may be lumpy)
Step 4
Spoon batter into prepared pan. Bake until top is golden and a toothpick inserted in the center comes out clean, about 25 minutes. Place pan on a wire rack and cool for 10 minutes. Cut into squares and serve warm.
Variation:
For some added color and taste, add 1 can (4 oz) chopped green chilies, drained to the batter in Step 3. Proceed as recipe directs.
