Chicken Tortilla Soup

Ingredients

  • 4 cups Chicken Stock (I use chicken bouillon cubes)
  • 1 whole Onions diced
  • 1.5 cloves Garlic crushed
  • 3/4 tablespoon Chili Powder (or more to add some spice)
  • 1 Small can Crushed Tomatoes
  • 1 whole Lime
  • 1 teaspoon Cumin
  • Salt to taste
  • Pepper to taste
  • 1/4 teaspoon Cayenne or more to taste
  • 1 Chicken Breast shredded
  • 1 Can of black beans (Drained)
  • 1 can corn (Drained)

Preparation

Step 1

Boil the chicken in 4 cups of the chicken stock.

Step 2

Once the chicken is cooked I shred the chicken or you can cube the chicken.

Step 3

In a large stockpot, heat 3 tablespoons of oil to medium-high heat. Add crushed garlic and chopped onions, and stir until onions just start to brown.

Step 4

Add the can of crushed tomatoes, cumin, cayenne pepper, chili powder, salt, pepper, and half of the lime juice. Turn up the heat until it bubbles, stirring constantly, then gradually stir in chicken stock. Turn down to low and simmer for 10 minutes.

Step 5

Add shredded chicken, corn, & black beans.

Step 6

Let that stuff cook for a few hours, at the very least 30-45 minutes.

Step 7

Squeeze the remaining bit of lime juice into each bowel.
