Ingredients
- 2 Lbs. boneless skinless chicken breast
- 1 jar salsa
- 1 can petite diced tomatoes
- 2 pkg taco seasoning
- 1 onion, finely diced, soaked and drained
- 1 celery heart, finely diced
- 6 oz sour cream
- 2 pkg spanish rice (or 2 cups rice, 1 red bell pepper finely diced, garlic, paprika, tumeric )
Preparation
Step 1
cut chicken in 3 inch cubes, place in bottom of crockpot. sprinkle taco seasoning on meat. layer veggies and salsa over the meat. pour a cup of water over the top.
Step 2
cook on high in crockpot for 6-8 hours.
Step 3
a half hour before done add in the spanish rice.
Step 4
before serving break up the chicken and stir in the sour cream fully
