Ingredients
- 12 oz peeled/deveined shrimp
- 1/2 cup scampi sauce
- 4 slices thick cut bacon
- 1 lemon 1 cup fresh pre-diced tomatoes
- 1/4 bunch Italian parsley
- 2 teaspoons minced garlic
- 1 (9oz) pkg fresh angel hair pasta
- 1/2 teaspoon crushed red pepper
- 3/4 cup white wine
- 2 tablespoons blackening seasoning
Preparation
Step 1
Put water on boil for pasta. Chop parsley. cut bacon into bite-size pieces.
Step 2
Place bacon in large saute pan on medium-high; cook and stir 5-7 minutes or until bacon is almost done. Cook pasta following package instructions.
Step 3
Sprinkle shrimp with blackening seasoning and add bacon; cook 1 min. Stir in tomatoes, wine, garlic, and pepper flakes; cook 2-3 minutes or just until shrimp turn pink and opaque.
Step 4
Stir in scampi sauce and lemon juice. Top with parsley and serve over pasta.
