Ingredients
- 12 oz linguine
- 1 can chicken broth or water
- 2 tablespoons lite soy sauce
- 12 oz ground pork
- 1/4 tablespoon red pepper flakes
- 6 scallions, cut in 1/2 pcs
- 1 large carrot, shredded
- 1 tablespoon minced garlic
- 1 tablespoon ginger
- 3 tablespoon creamy peanut butter
Preparation
Step 1
Bring a lg pot of water to boil. Cook linguine as pkg directs. Stir together broth and soy sauce in a measuring cup.
Step 2
Heat a large skillet over medium- high heat. Add ground pork and red pepper flakes. Cook 5 minutes, breaking up, until browned and no longer pink. Add scallions, carrots, garlic, and ginger; cook 3 min.
Step 3
Stir broth mixture and peanut butter into pork. Cook until peanut butter is melted and blended.
Step 4
Reserve 1 cup pasta water. Drain linguine, add to skillet and toss to evenly coat with sauce. (Stir in some pasta water if needed to keep mixture creamy).
