Ingredients
- 3 hard-boiled eggs
- 1 tsp vinegar
- 1.5 TBSP plain yogurt
- 1 (5 oz.) can tuna*
- 1 TBSP sun-dried tomatoes, packed in oil {do not drain oil from tomatoes; for sun-dried tomatoes not packed in oil, add 1 tsp olive oil}
- 1 TBSP fresh chopped basil
Preparation
Step 1
Slice hard boiled eggs in half lengthwise. Discard all but one yolk. Set aside. In a medium bowl, mash egg yolk. Stir in tuna, vinegar, and yogurt. Stir in sun-dried tomatoes and basil. Fill each of the egg white halves with the tuna mixture. Serve with extra chopped basil if desired.
