Pumpkin Whoopie Pies

"This is a fall twist on a classic PA Dutch dessert, whoopie pies :) The aroma of fresh picked pumpkin, the lingering scent of sweet vanilla, and the spicy scent of warm cinnamon, clove and ginger will be too delicious to resist one of these! "

Ingredients

  • 2 C brown sugar
  • 1 1/2 C. Mashed Pumpkin
  • 1 C. Vegetable oil
  • 2 eggs
  • 3 C. flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 1/2 TB cinnamon
  • 1/2 TB ginger
  • 1/2 TB ground cloves

Preparation

Step 1

Heat over to 350 degrees. Lightly grease baking sheets.

Step 2

Combine oil and brown sugar. Mix in pumpkin and eggs, beating well.

Step 3

Add the flour, salt, baking powder, baking soda, vanilla, cinnamon, ginger and clove. Mix well.

Step 4

Drop dough by the heaping tsp on each sheet. Bake 10-12 mins Let cookies cool then sandwhich them with whoopie pie filling.

Whoopie pie filling : Beat one egg white with and mix with 2 TB milk, 1 tsp vanilla and 1 Cup confectioners sugar. Mix well, then beat in 3/4 cp shortening and another cup of confectioners sugar. Beat until light and fluffy.
