Ingredients

  • 2 cups all-purpose flour
  • 1 1/3 cup rolled oats (not instant)
  • 1 1/4 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp fine salt
  • 1/2 tsp nutmeg
  • 2 sticks unsalted butter (8 ounces), room temp
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 large egg, room temp
  • 1 tsp vanilla extract
  • 1 3/4 cup pumpkin puree

Preparation

Step 1

Heat oven to 350 degrees, line two sheets with parchment paper.

Step 2

Whisk the Flour, oats, baking powder, cinnamon, ginger, salt, and nutmeg in a bowl. Break apart any lumps.

Step 3

Butter and sugars in stand mixer, beat on medium until you get a light color. Approx.. 5 minutes

Step 4

Add egg and vanilla, beat 30 seconds or until incorporated on medium.

Step 5

Add half of flour mixture. Mix, Add half Pumpkin, Mix, continue until all gone.

Step 6

Place by Tbsps. every 2 inches on sheets. Cool sheets in between batches.

Step 7

Place in Oven for 12 minutes. Cool for 3.
