Pumkin Curry Soup

Ingredients

  • 1/2 C dried chantrelle mushrooms
  • 1 diced sweet onion
  • 2 T butter
  • 2 T flour
  • 1 t curry powder
  • 2 C chicken broth or water and chicken bullion
  • 3 C pumpkin puree
  • 1 can evaporated milk
  • 1 T honey
  • 1/2 t salt
  • 1/4 pepper
  • 1/4 nutmeg

Preparation

Step 1

Sautee mushrooms and onions in butter.

Step 2

Add flour and curry powder, mix.

Step 3

Add broth, boil, cook 2 minutes until thickened.

Step 4

Add rest of ingredients and heat through.
