Ingredients
- 2 kg turkey breast
- 2 1/2 cups|600 g baby potatoes, halved or quartered
- 1 cup|250 g peeled baby carrots
- 1/2 cup|125 m low sodium turkey or chicken stock
- 1/2 tsp|2.5 ml sea salt
- 1/4 tsp|1.25 ml freshly ground black pepper
- 2 tbsp|30 ml mild paprika
- 1 tsp|5 ml ground coriander seed
- 1/2 tsp|2.5 ml dried ground rosemary
Preparation
Step 1
Microwave potatoes on high for 4.5 minutes. Place in
bottom of a 6-7 quart slow cooker.
Microwave carrots on high for 2.5 minutes, add to cooker.
Mix in stock, salt and pepper.
Place the roast on its side on top of the vegetables in the
slow cooker.
Mix paprika with coriander and rosemary and sprinkle
over roast.
Cook on high setting for 6 hours.
