Buffalo Chicken Quesadillas

Ingredients

  • 1 lb boneless skinless chicken
  • 1 cup buttermilk
  • 1 cup flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup hot sauce
  • Cheese
  • Spring onions
  • Tomatoes
  • Tortillas
  • 2 Tbsp butter

Preparation

Step 1

Add the chicken tenders to a medium bowl pour the buttermilk over and mix to ensure that the chicken are coated completely. Let stand for 10 minutes at room temperature.

Step 2

Mix together the flour, salt, and pepper in large bowl. Add the chicken and dredge completely.

Step 3

Heat about an inch of oil in a large skillet over medium-high heat. When heated shake excess flour from chicken and add to skillet. Fry until cooked entirely 4 minutes one side 3 minutes the other. fry in batches remove and drain on paper towel

Step 4

While chicken is cooking heat hot sauce and butter in small skillet. Toss with cooked chicken.

Step 5

Add onions, tomatoes, cheese and chicken to tortillas and cook over medium heat.
