Butter Scotch Cookies

Ingredients

  • 1 cup butterscotch chips
  • 1/2 cup soft butter
  • 2/3 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 2 cups corn flakes - slightly crushed

Preparation

Step 1

melt half of the butterscotch chips in a small sauce pan. Combine butter, brown sugar, egg and vanilla in large bowl and beat with electric beater. Stir in melted chips and thoroughly combine. Add flour, baking soda and salt to creamed mixture. Stir in corn flakes and remaining butterscotch chips. Shape into balls 1 inch diameter. Place on un-greased cookie sheet. Flatten with fork dipped in sugar. Bake at 350 degrees for 8-10 min.
