Ingredients
- 2 tsp olive oil
- 1 C chopped onions
- 1/2 C diced celery
- 1/2 C chopped green pepper
- 1 clove garlic, minced
- 3 C vegetable broth
- 3 C peeled, cubed sweet potato
- 1 can (19 oz) diced tomatoes
- 1 can chickpeas, drained
- 1 tsp lemon juice
- 2 tsp grated ginger
- 1 tsp cumin
- 1 tsp curry powder
- 1 tsp coriander
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 raisins
- 2 tbsp peanut butter
- 2 tbsp chopped cilantro
Preparation
Step 1
Heat oil in large saucepan over med-high heat. Add onions, celery, green pepper and garlic. Cook and stir until veggies begin to soften, about 3 mins
Step 2
Add remaining ingredients except raisins, peanut butter and cilantro. Bring to a boil. Reduce to low and simmer, covered, 20 mins.
Step 3
Stir in raisins, peanut butter and cilantro. Mix well. Simmer 5 more mins.
