French Pie Crust

Ingredients

  • 120 g unsalted butter/room temperature, diced (4 ½ oz)
  • 75 g (3 oz) icing sugar sifted
  • 3 egg yolks
  • 250 g (9oz) flour
  • 2 tbsp water

Preparation

Step 1

Mix butter and icing sugar to a cream; then beat in 2 egg yolks.

Step 2

Add flour, then with fingers, mix together to form a crumbly texture –add the water and press dough together to form a ball.

Step 3

With palm of hands, knead dough on a lightly floured surface (max 30 seconds). Flatten dough slightly. Wrap in plastic wrap and refrigerate for 30 minutes.

Step 4

Roll out pastry. Place in pie tin (9 ½ inch).

Step 5

Prick dough all over with fork and refrigerate for 30 minutes.

Step 6

Bake at 325 degrees, cover with foil, place in beans, bake 10 minutes, then take beans out and bake 20 minutes.

Step 7

Brush inside of the crust with egg yolk and bake 1 more minute.
