Ingredients
- 1 1/4 cups Flour
- 1 1/2 cups White Sugar
- 12 Egg Whites (1 1/2 cups)
- 1 1/2 tsp Cream of Tartar
- 1/4 tsp Salt
- 1 1/2 tsp Vanilla
Preparation
Step 1
Preheat oven to 350F. (Not convection)
Step 2
Place egg whites in mixer bowl, beat at high speed until frothy (about 1 minute).
Step 3
Add cream of tartar, salt and vanilla, mix until almost stiff (about 4 minutes).
Step 4
Add 1 cup sugar gradually while mixing on low speed, scraping bowl regularly.
Step 5
Mix flour and remaining 1/2 cup sugar and fold gently into egg white mixture 1/4 cup at a time.
Step 6
Spoon into cupcake liners, 3/4 full.
Step 7
Bake for 20-25 minutes, until tops are golden with dry cracks.
Cool completely before removing from pan.
Be careful not to stomp feet near the oven or they won't rise properly!
