Cranberry Bread

Yvon's favorite cranberry bread.

Ingredients

  • 2 cups Flour
  • 1 cup Sugar
  • 1 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/4 cup Butter (soft)
  • 1 Egg
  • 1 tsp Orange Zest
  • 3/4 cup Orange Juice
  • 3 cups Cranberries, sliced in halves.

Preparation

Step 1

Preheat oven to 350F

Step 2

Mix all dry ingredients in large bowl.

Step 3

Cut in butter with a fork, until mixture is crumbly.

Step 4

Add egg, orange juice, and orange zest all at once, and stir until evenly moist.

Step 5

Fold in cranberries.

Step 6

Spoon into a greased 9x5x3" loaf pan, and bake for 1 hour and 10 minutes, or until toothpick in center comes out clean.

No peeking in the oven or it won't rise nicely!
