Apricot Horns

Ingredients

  • DOUGH
  • 1 cup butter, 1/2 lb cottage cheese and 2 cups flour
  • FILLING
  • 1/2 lb dried apricots and 1 cup sugar
  • GLAZE
  • 1 1/2 cup ground almonds, 1 1/3 cup sugar and 4 egg whites

Preparation

Step 1

DOUGH
Blend butter, cottage cheese and flour with a pastry knife. Then work with hands to form dough. Add more flour if needed. Shape into 1 inch balls and refrigerate covered overnight

Step 2

FILLING
Place apricots in a pot and cover with water. Cook until tender. Drain fluid and purée. Stir in sugar and set aside until cool

Step 3

GLAZE
Mix ground almonds and sugar together. In a separate bowl slightly beat egg whites

Step 4

Roll dough balls into 3 inch rounds. Place 1 tsp of filling on one side then fold over to close. Shape into a horn. Brush with egg whites and roll in almond and sugar mix. Bake at 350 F for 15 mins
