Bran Chocolate Chip muffins

Ingredients

  • 2 cups boiling water
  • 6 cups all bran cereal
  • 3 cups sugar
  • 3/4 cup vegetable shortening
  • 4 tbsp butter
  • 3 cups chocolate chips
  • 4 cups buttermilk
  • 4 eggs
  • 5 cups flour
  • 1 tsp salt
  • 5 tsp baking soda

Preparation

Step 1

Add 2 cups of cereal into boiling water and set aside

Step 2

Cream next 6 ingredients then fold in dry ingredients and boiled cereal

Step 3

Spoon into muffin tins and bake at 400' for 20 minutes

Buttermilk: 1 tbsp vinegar mixed with 1 cup milk and let stand for 5 mins. Makes 1 cup of buttermilk
Batter can be stored in plastic container in fridge for 4 weeks
