Ingredients

  • Dry ingredients
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ginger
  • 1/8 tsp allspice
  • 1/2 c brown sugar
  • Wet ingredients
  • 1 egg
  • 1/2 c milk w/ 1 tbs lemon juice
  • 1/4 c oil
  • 1 c apple sauce
  • 1/2 tsp vanilla
  • 1 c crushed pineapple w/ juice
  • 3/4 c grated carrot
  • 1/2 c raisins
  • 1/2 c walnuts
  • 1/2 c coconut

Preparation

Step 1

Preheat oven to 400 degrees.
Combine dry ingredients. Beat together wet ingredients and pour into dry mixture. Stir till just combined.
