Zucchini Bread

Ingredients

  • 3 eggs
  • 2 1/4 c. sugar
  • 3 t. vanilla
  • 1 cup veg. oil
  • 2 c. shredded zucchini
  • 3 c. flour
  • 1/4 t. baking powder
  • 1 t. salt
  • 1 t. baking soda
  • 3 t. cinnamon
  • 1 c. chopped nuts

Preparation

Step 1

Preheat oven to 350 degrees.

Step 2

Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well.

Step 3

Stir in shredded zucchini. Add dry ingredients. Stir well. Add nuts and stir well.

Step 4

May be baked in 2 loaf pans for 1 hour , or 5 small pans for 45 minutes.
