BANANA MUFFINS WITH CREAM CHEESE ICING

Ingredients

  • WET INGREDIENTS:
  • 3-4 ripe bananas
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp vanilla
  • DRY INGREDIENTS:
  • 1 3/4 cups all purpose flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • ICING
  • 4 oz cream cheese (1/2 package)
  • 1/4 cup olive oil
  • 2 cups icing sugar

Preparation

Step 1

DIRECTIONS:
Preheat oven to 350 degrees
Put all "wet" ingredients in a bowl.

Step 2

Mix all wet ingredients together, you can mash them up or use a hand blender. I have used a hand blender to mix them.

Step 3

Put all dry ingredients in a LARGE separate bowl.

Step 4

Mix the dry ingredients together and make a well in the centre of the bowl. Pour the banana mixture into the well and stir until combined. Do not use a blender and do not over mix.

Step 5

Put cupcake liners into 2 muffin pans and divide the mixture between them to make 24 muffins. Bake for 15 minutes or until toothpick inserted in centre comes out clean.

Step 6

ICING:
Mix room temperature cream cheese with the the olive oil and vanilla. Gradually add the icing sugar until it is all mixed in.

Apply the icing to the cooled muffins using a knife or icing kit.

Keep the muffins stored in an air-tight container in the refridgerator. These muffins are very moist and freeze well.
